Mini Valentine’s Cake for Two with Lovely Liquorice Icing

Want to treat your loved one to a super cute dessert just for the two of you? Follow this easy recipe to create a treat this Valentine’s Day they won’t forget any time soon. Khoisan Tea have created the most spectacular Organic Liquorice Extract that brings this baked delight to life!

Cake – Ingredients

180ml Gideon Mills Cake Flour
5ml baking powder
1ml teaspoon fine Oryx Desert salt
1 large egg, at room temperature
40ml sugar
75g unsalted butter, melted
5ml pure Khoisan Tea Organic Vanilla Extract
60ml milk

Cake – Directions

Preheat oven to 180 degrees. Grease a small cake tin or glass dish that is suitable for use in the oven.

Mix the flour, baking powder and salt together in a medium bowl.

In another medium bowl, beat the eggs and sugar with an electric mixer until light and frothy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.

While mixing slowly add half the dry ingredients. Then add all the milk and follow with the rest of the dry ingredients. Take care not to over mix the batter. Scrape the batter into the baking tin.

Bake for 18 to 20 minutes. Cool on a cake rack and decorate once completely cooled.

Lovely Liquorice Buttercream Icing

Icing – Ingredients

125ml unsalted butter, softened
2 teaspoons Khoisan Tea Pure Liquorice Extract
500ml icing sugar, sifted
30 ml milk

Icing – Directions
Cream the butter until smooth and fluffy. Gradually beat in the icing sugar until fully incorporated. Beat in liquorice extract.
Pour in milk and beat for an additional 3-4 minutes.

Leave in the fridge to set for a few hours. This just helps the buttercream to stay firm and beautiful.
